Learn How to Make Margherita Pizza at Home

Understanding the Basics of Margherita Pizza

Margherita pizza represents one of the most iconic dishes in Italian cuisine, with a history dating back to Naples in the 18th century. The pizza's name honors Queen Margherita of Savoy, who visited Naples in 1889. According to historical accounts, a local pizzaiolo created this dish to represent the colors of the Italian flag: red tomatoes, white mozzarella cheese, and green basil. This traditional pizza contains just four primary ingredients—dough, tomato sauce, fresh mozzarella, and basil—making it an excellent choice for home cooks who want to master fundamental pizza-making techniques.

The beauty of Margherita pizza lies in its simplicity and the quality of its components. Because the ingredient list is short, each component plays a crucial role in the final result. The dough provides the foundation, the tomato sauce adds acidity and flavor, the mozzarella cheese contributes richness and texture, and the basil provides fresh, aromatic notes. Understanding how these elements work together helps you recognize what makes this pizza special and how to select the best ingredients for your homemade version.

Making Margherita pizza at home requires no specialized equipment beyond what most kitchens already contain. A basic oven, a baking sheet or pizza stone, a rolling pin or your hands, and standard mixing bowls are sufficient to create authentic results. Many home cooks worry that they cannot replicate restaurant-quality pizza without a wood-fired oven, but modern electric or gas home ovens produce excellent Margherita pizza when proper techniques are followed.

Practical takeaway: Recognize that Margherita pizza's reputation comes from ingredient quality and technique rather than complicated methods or fancy equipment. Focus on sourcing good-quality ingredients and understanding the basic principles of dough development, sauce preparation, and proper baking temperatures.

Preparing Your Pizza Dough from Scratch

Pizza dough consists of four basic ingredients: flour, water, yeast, and salt. A standard recipe uses approximately 500 grams (about 3.5 cups) of all-purpose flour, 325 milliliters (roughly 1.4 cups) of room-temperature water, 7 grams (1.5 teaspoons) of instant yeast, and 10 grams (2 teaspoons) of salt. These measurements create dough sufficient for two 12-inch pizzas. The ratio of water to flour—known as the hydration level—typically ranges from 60 to 65 percent for Margherita pizza dough. This hydration level produces dough that is workable for home cooks while still creating a slightly chewy, airy crust.

Begin by mixing the flour and salt in a large bowl. Create a well in the center and pour in the water. Sprinkle the yeast over the water and let it sit for approximately two minutes, allowing the yeast to begin activating. Using your fingers or a wooden spoon, gradually incorporate the flour from the bowl's sides into the water. Mix until all the flour is moistened and a shaggy dough forms. This initial mixing typically takes three to five minutes. Once the ingredients are combined, let the dough rest for 20 minutes in what bakers call the "autolyse" phase. During this resting period, the flour fully hydrates and gluten begins developing naturally.

After the autolyse rest, perform a series of "stretch and folds" to develop the dough's gluten structure. Wet your hand slightly and grab one side of the dough, stretching it up and folding it over the center. Rotate the bowl and repeat this process from all four sides. Perform this entire sequence six times, resting for 30 minutes between each series of stretch and folds. You will notice the dough becoming smoother and more elastic after each round. This process takes approximately three hours total. Alternatively, you can knead the dough by hand for 10 minutes on a lightly floured surface or use a stand mixer fitted with a dough hook for six to eight minutes.

Allow the dough to undergo a final rise for four to 24 hours at room temperature or refrigerated. Many bakers prefer cold fermentation in the refrigerator for 24 hours because it develops flavor and makes the dough easier to stretch. If you use room-temperature fermentation, the dough is ready to shape when it roughly doubles in size, which typically occurs within four hours. You can test readiness by pressing your finger gently into the dough—if the indentation slowly springs back halfway, the dough is properly fermented.

Practical takeaway: Master the basic dough-making process using the stretch and fold method, which requires minimal kneading and produces excellent results for home cooks. Plan ahead for proper fermentation time, as allowing dough to ferment slowly develops flavor complexity that rushed dough cannot achieve.

Selecting and Preparing Quality Ingredients

The success of your Margherita pizza depends heavily on ingredient selection because the recipe contains so few components. For the tomato sauce, use San Marzano tomatoes if available, as these tomatoes originate from the volcanic soil near Mount Vesuvius in Italy and contain lower acidity and fewer seeds than standard tomato varieties. A 28-ounce can of San Marzano tomatoes is sufficient for two pizzas. If you cannot locate San Marzano tomatoes, high-quality crushed tomatoes from any reputable brand work adequately. Avoid tomato sauce from jars or cans labeled as "pasta sauce" because these products often contain added garlic, herbs, and oils that are not traditional for Margherita pizza.

Fresh mozzarella cheese forms the foundation of a proper Margherita pizza, and this selection significantly impacts your results. Look for mozzarella di bufala, which is made from water buffalo milk, or fior di latte, which is made from cow's milk. Both varieties are available at most grocery stores in the cheese section, often packaged in water to maintain freshness. Standard low-moisture mozzarella, the variety used on most pizza restaurant pizzas, works well but produces a different texture than fresh mozzarella. For Margherita pizza specifically, fresh mozzarella's delicate, creamy texture is preferred. Purchase mozzarella as close to cooking time as possible, ideally within one or two days of use. The fresher the mozzarella, the better it performs on pizza.

Basil selection also matters for authentic Margherita pizza. Use fresh basil, preferably sweet basil, added after the pizza emerges from the oven. This prevents the basil from burning and preserves its bright, fresh flavor. Purchase basil with vibrant green color and no brown spots. Store basil at room temperature in a glass of water rather than in the refrigerator, where cold temperatures damage the leaves. If fresh basil is unavailable, wait until you can obtain it rather than substituting dried basil, which produces a very different flavor profile.

For the olive oil component, use extra-virgin olive oil with a flavor profile you enjoy. The oil serves both functional and flavor purposes in Margherita pizza. A light drizzle over the finished pizza enhances the overall dish. Choose olive oil bottled in dark glass to protect it from light degradation. Avoid oils labeled as "light" or "pure" because these have been heavily processed and lack flavor. You may also add a small amount of olive oil to your dough if desired, though traditional recipes sometimes omit it.

Practical takeaway: Purchase the highest quality ingredients your budget allows, particularly San Marzano tomatoes and fresh mozzarella cheese. Accept that Margherita pizza's limited ingredient list means each component's quality directly affects the final product, making ingredient selection a crucial step rather than a minor detail.

Making and Using Your Tomato Sauce

Traditional Margherita pizza tomato sauce requires minimal preparation. A basic recipe calls for one 28-ounce can of San Marzano tomatoes, one teaspoon of salt, and one-half teaspoon of dried oregano. Some recipes add a small amount of garlic or fresh basil to the sauce itself, though purists argue that basil should appear only on the finished pizza. Begin by placing the canned tomatoes in a bowl and crushing them by hand until you reach your desired consistency. Some cooks prefer a smooth sauce with all tomatoes completely crushed, while others leave small pieces intact. There is no single correct approach—this is a matter of personal preference.
